Local Forage

  • Eating is one of our most primal and sensual acts. And eating what's good for you doesn't mean depriving yourself of gastronomic delight. Local Forage explores why traditional foods—the real, unprocessed, whole-fat foods of our grandparents—delivers the winning combination of maximum health and maximum taste.

Local Forage provides an exchange of practical information on where to buy these nutrient-dense traditional foods in the bay area, how to prepare them and how to think "beyond organic".

Buffalo Mozzarella 12-Step Program

Picture_033_1 CB: "Hi, My name is Carla Borelli and I can't stop eating buffalo mozzarella."

Group: "Hi, CAR-la".

For me, buffalo mozzarella is the epitomy of comfort food. I just can't get enough of its soft custard-like inside texture, firm outside membrane and subtle but distintively rich flavor. If you love me, you bring me buffalo mozzarella not flowers.

I have been eating the same brand for a while; it's very good and not as expensive as some others. Gustosella. It's from Rainbow Market and it's $5.29 for a single oval. It's imported; I can't bear the domestic versions. So yes, contrary to the title of this blog, I occassionally eat imported foods. There I've said it.

If anyone has a domestic buffala that you think is worthy a better value, please let me know. Until then, I'll be savoring my Gustosella.

(Oh, and for you lactose-intolerant ones...Mozzarella di bufala is produced though the natural fermentation process which apparently reduces, some even say eliminates, the lactose.)
